Tamarind is a large evergreen tree belonging to the Tamarindus genus of the Caesalpinioideae subfamily (Leguminosae). Native to Africa, it is now widely distributed across tropical and subtropical regions; in my country, it is primarily found in provinces and regions such as Yunnan, Hainan, Guangxi, Guangdong, and Fujian. The fruit pulp offers a delicious sweet-and-sour flavor and is rich in reducing sugars, organic acids, minerals, vitamins, and aromatic compounds. It possesses a unique sweet-and-sour fruity aroma, accompanied by subtle notes of caramel and a woody undertone.
